A lovely evening in Wentworth, Virginia Water, Surrey, GU25. The host chose some of my favourite Eastern and Middle-Eastern dishes – with some classic Italian (mozzarella and tomatoes) and old English (Eton Mess) also thrown in. The great thing about hiring a private chef is that you are not tied to one style of cuisine!

I was cooking for a 40th birthday party. Fortunately the weather held out, and the whole evening was spent outdoors. Guests were greeted with an eclectic selection of canapés – and then we served grilled meats and fish from the barbecue.

Even the rain didn’t manage to dampen the spirits of the guests at this gorgeous lunch party in Petersham, Richmond, TW10. My client has excellent taste in food, and particularly likes Italian classics such as Spinach, mushroom and ricotta rotolo, which was also a favourite of mine when I was a young chef working with Theo Randall and Jane Baxter under the guidance of Rose Gray and Ruth Rogers at the River Café, London W6.

The brief for this wedding party was to create a sumptuous country style feast; and the combination of colours and heights of the dishes looked amazing on the day. The party went on for hours – we even served tea with scones and cakes in the evening – and was held in a beautiful big marquee in Esher, Surrey, KT10.

Holland Park, Kensington: Christmas canapés for 100

My clients in Holland Park, London W8, wanted to give their guests an evening to remember. My waiting staff all dressed up as characters from The Nutcracker, and the table – in line with the host’s wishes – was heaving with cakes, turkeys, and mince pies as well as all the lovely little eats on the menu below.
