Cobham, Surrey: BBQ for 24 people
In leafy Cobham, Surrey, KT11, I was cooking for a 40th birthday party. Fortunately the weather held out, and the whole evening was spent outdoors. Guests were greeted with an eclectic selection of canapés – and then we served grilled meats and fish from the barbecue.
Canapés
Tiger prawn skewers with pickled ginger and sweet chilli sauce
Mini pissaladieres (buttery soft onions with salty anchovies and juicy olives on a crispy pizza base)
Pea and potato empanadas (tiny crescent shaped pasties made with the lightest pastry and seasoned with chilli, mint and curry powder)
Tortilla crisps topped with a red pepper and chorizo relish
Mixed meats: culatello, salami and chorizo
BBQ Mains
Roast sea bass in banana leaves with ginger, shitake mushrooms and chilli
Squid skewers with cumin, coriander and clams
Beef fillet studded with rosemary and garlic in a salt crust
Cooking the beef in this salt crust keeps it lovely and tender.
Roast sucking pig stuffed with fennel, lemon, thyme and pancetta
