Esher, Surrey: Wedding buffet for 120 guests
The brief for this wedding party was to create a sumptuous country style feast; and the combination of colours and heights of the dishes looked amazing on the day. The party went on for hours – we even served tea with scones and cakes in the evening – and was held in a beautiful big marquee in Esher, Surrey, KT10.
Starters
Prosciutto, figs and mozzarella.
Griddled asparagus with romanesco sauce.
Piedmontese peppers, and herb and feta baked courgettes and aubergines.
Slow cooked pork with cherries. This sumptuous belly pork dish is brought to life with the addition of ginger, palm sugar and port wine in the sauce.
Vitello tonnatto. Very thin slices of poached veal with mayonnaise, tuna and capers – a wonderful classic Italian dish!)
Tortilla. The classic potato, onion and egg omelette.
Mains
Salmon en croute with ginger, almonds and raisins, served with chervil and tarragon sauce.
Whole roast wild seabass filleted, stuffed with fennel, red onions, capers and lemon.
Crab and saffron mousse, in ramekins.
Traditional English raised veal and smoked ham pie.
Cheese and onion tartlets.
Spinach and ricotta torte.
Sides
Fresh pea, broad bean and baby gem salad with crisp prosciutto.
Beetroot, roast squash and soft goat’s cheese salad with pomegranates and rocket.
Bulghar with cinnamon, pomegranates and walnuts, seasoned with cumin, coriander, tomato and mint.
Potato, onion and gruyere salad, with crispy pancetta.
Grilled and marinated vegetables, dressed with salsa verde.
Desserts
Lemon tart.
Mixed berry tartlets with vanilla cream.
Pressed chocolate cake with poached pears and cream.
Eton mess.
